Summer is here, and it is time to celebrate! From barbecues to afternoon treats, this Fourth of July dessert recipe is sure to be a favorite all summer long, especially for the Fourth of July. Ingredients:
1/2 pound strawberries
1/4 cup sugar
1/2 pound blueberries
1 1/4 cups low-fat plain yogurt
Food processor
Popsicle mold
Popsicle sticks
Start by preparing the fruit. Remove any stems, and wash and dry the berries. Then, quarter the strawberries. Put the strawberries in the food processor and process until they’re pureed. Set the strawberry puree aside in a separate bowl. Then puree the blueberries. Once they’re the right consistency, set aside the blueberry puree. Add a tablespoon of sugar to each fruit puree if you desire for extra sweetness. In a separate bowl, mix together the yogurt and two tablespoons of sugar.
Get your popsicle mold ready and pour the mixtures into the molds. Just be sure to alternate between the strawberries, yogurt, and blueberries. Layer them with three to five pours. To add to the design, swirl the popsicles by moving a skewer in an up and down motion.
Once you’re content with your design, add in the popsicle stick and put them in the freezer.
Let them freeze for at least a couple hours until solid, and they’re ready to serve.
