Labor Day Recipe: Hot Fudge Ice Cream Bars

Whip up this delicious hot fudge ice cream bar recipe for Labor Day!

Labor Day is a great holiday; you get a day off work for the pure reason that you have to go to work so many other days of the year. In essence, it is a holiday designed to give you a pat on the back for all of your hard work and a free pass to truly relax.

You may be gathering up friends and family for a Labor Day barbecue, but that doesn’t mean you have to give up your relaxation. To make feeding everyone easy on yourself this Labor Day, use this delicious dessert recipe for hot fudge ice cream bars. To make them, you will need:

  • 1 16-ounce can of chocolate syrup
  • ¾ cup of peanut butter
  • 18 ice cream sandwiches
  • 1 thawed 12-ounce container of frozen whipped topping
  • 1 cup of salted peanuts

In a microwave safe bowl, heat the chocolate syrup in the microwave for 2 minutes. Every 30 seconds, stop and stir the chocolate, checking that it does not boil. Once hot, add the peanut butter in, stirring until smooth. Let cool back to room temperature.

In a 9×13 inch baking dish, create a base layer by laying down half of the ice cream sandwiches. Spread half of the whipped topping over them, then spoon half the chocolate/peanut butter mixture over that. Sprinkle with half of the peanuts.

Repeat the same layers (ice cream sandwiches, whipped topping, chocolate mixture, peanuts) then pop the dish in the freezer. Freeze for at least one hour, then cut into squares. Keep in the freezer until you are ready to serve, then enjoy!
