Whip up this healthy quinoa breakfast bowl to have more energy throughout the day.
The holiday season is without a doubt one of the busiest times of year. There are a lot of demands on your time in the coming weeks, and it’s easy to feel a little run down by it all. Instead of reaching for that second (or third!) cup of coffee to get through the morning, why not try healthy recipes that will give you energy to burn throughout the day? For a super boost of energy, whip up this healthy breakfast recipe for tasty, filling quinoa breakfast bowls for the whole family.
- 1 cup of quinoa
- 2 tablespoons of olive oil
- 4 eggs
- ¼ teaspoon of kosher salt
- ¼ teaspoon of black pepper
- 1 chopped avocado
- 6 ounces of smoked salmon
- 1 lemon, cut into 8 wedges
- ¼ cup of sliced scallions
Pour the quinoa into a medium saucepan with two cups of water. Bring the mixture to a boil, turn the heat to low, and cover. Let simmer until the quinoa has absorbed all of the water (about 15 minutes). Fluff with a fork.
While the quinoa is cooking, heat the oil in a large nonstick skillet over medium. Add the eggs and cook for two minutes. Flip, then cook for two more minutes. Season with the salt and pepper.
Divide the quinoa between four bowls. Top each bowl with an egg, ¼ of the chopped avocado, 1.5 ounces of salmon, 2 lemon wedges, and ¼ of the scallions. Dig in, and you’ll be feeling great and energized for the rest of the day!
